Ecuador Living…Second course served at breakfast - organic healthy “burst in your mouth” delicious fruit during my visit to Ecuador…

Aughhhhh….while I felt the numbing cold of a good ol Canadian snowstorm this last week (translation - freezing my tush off)…

…my mind meandered to the lovely (and warm) experiences I had while staying at Hotel El Mason in Ecuador and the gourmet organic meals prepared for me every day.

I traveled to Ecuador to ‘Jump-Start’ my health and get back into healthy organic type of living…and there is no better place to do that then Cotacachi, Ecuador. According to Wikipedia, the ecosystems of the area and the native flora and fauna makes this canton one of the ecologically richest zones in South America.

The picture above is just a ’start’ to my morning breakfast, you see, at Hotel El Mason…you receive not one course…but at least 3 courses for your breakfast including the most incredible smooth organic Ecuadorian coffee served piping hot.

So if the first picture above of the fruit was the second course…you may be wondering what was the first? Ah Ha - well the national grain of Ecuador of course! Organic Quinoa…also known as “the sacred crop “, “chisaya mama” or “mother of all grains“.

Above is a picture of my First Course of my organic breakfast in Ecuador - the ancient grain of Quinoa served in a soothing warm milk sprinkled with just a light dusting of cinnamon that simply delights the taste buds. Oohhh how I miss that as I tried getting some Quinoa from the nearby Bulk Barn in Canada land to find they were ’sold out’!

…So now on the third course served for your gourmet breakfast at Hotel El Mason…and here I asked for some organic scrambled eggs as I knew I’d hike it off that day at a beautiful bright blue colored lake, Cuicocha Crater Lake.
