Plus Cotacachi food is beautifully served at Quinoa Cafe. This is breakfast.
With fresh, local Cotacachi fruit… and fresh squeezed juice…all part of the room rate at our hotel, El Meson de las Flores.
There is more than good looks and taste to Cotacachi food
I received this note about Cotacachi’s food from a reader who is building a house in Cotacachi.
Hi Gary…It was good seeing you, Merri and Ma in Cotacachi.
Something very interesting with the food happened to me while I was in Cotacachi. During 23 days there, I lost 17 pounds, dropping from 197 to 180 pounds. I didn’t plan to lose weight. I just was never hungry yet had plenty of energy despite a much lower calorie intake.
While I did a fair amount of walking, it was no more exercise than I get while at home here in Falls Church, Virginia. I imagine the fresh air, the organic Cotacachi food, and the friendly environment somehow contributed to what happened to me.”

Here we are with our chef Santiago. He has been preparing the food at our Hotel El Meson de las Flores since he was 14 years old. The people here are professionals…happy to have work and they enjoy it. this happiness comes through in the food.
Another reason Cotacachi food is good is that it is fresh. We had just collected this fish caught the day before and trucked overnight from the coast.
Cotacachi food is served at our hotel with love and care. Here are three of our food servers Consuelo, Veronica and Eduardo. Everyone who stays at the hotel loves them. They really care about our happiness and we feel this.
Cotacachi food is also healthy because it is prepared with the Andean nutritional system that keeps a good fat, protein, carbohydrate balance.
The cake above was to celebrate a guest’s birthday but at our Cotacachi hotel we do not make ordinary cake. We make it with low calorie, high protein gluten free quinoa.
The Andeans also do not mix sweet with salt.
They avoid fermented foods and divide foods into three group: sweet, savory and neutral.
You can mix sweet and neutral or salt and neutral but not sweet and savory.
Melon and pineapple are only eaten alone.

Food in Cotacachi usually surprises the first time visitor. They expect something like Mexican. Nothing could be further from the truth.
